This simple recipe packs all your favorite flavors of the med into one delicious stew!

The ingredients in this stew are big on flavor, naturally infusing the broth as it cooks. The fish is then gently poached in the stock, taking on all its flavour.

The recipe calls for cod, however you could use any flaky white fish of your choice.

Recipe Steps

  • Step 1

    Finely dice the onion and mince the garlic. Heat the oil in a large casserole dish over a low/medium heat and add onion and garlic. Fry gently until softened.

    Finely dice the tomato and add to the pan along with the stock. Bring the pan to the boil.

    Reduce the stew to a simmer and add the capers and olives. Finely chop the oregano and basil and add to the stew.

    Stir well and simmer for 4-5 minutes allowing the flavors to infuse.
  • Step 5

    Add the cod fillets to the pan so that they are just covered by the broth until completely cooked through and flaky, about 10 -12 minutes. Scatter with fresh basil to serve.

    Just cooked this, smells amazing! So tempting to add rice noodles, though! I like the ideas below of adding some lemon juice and/or crumbled feta on top, I’m going to try these to see which variation I prefer.

          This fish stew was surprisingly good. Given the ingredients, I was skeptical at best. But after trying it, I'm sold. Definitely a keeper for me. Loved it! Also, as a side note, the serving are 2, so a single serving should be 1 and not 1/4th.

                    Is the oregano dry or fresh. Can I use dried?

                      They are using fresh, however you can use dried just reduce the amount in recipe by half for dried oregano and add the dried oregano when adding it with the stock.

                          I'm allergic to tomatoes, will the recipe suffer if I don't use them?

                            This was so yummy. The only change I made was I added a tad of Greek seasoning because I was out of garlic powder, so I left out salt and pepper too because of Greek seasoning. I had some crumbled feta cheese and sprinkled some on each bowl I served. Yum yum.

                                          Hi, in the recipe I used mixed green and black, but the recipe would work with any kind of olives you wished to use. Hope this helps.
