  • Step 1

    Preheat an oven to 450 F. Place a 6 quart dutch oven with the lid on in the oven as soon as you turn it on to allow it to come to temperature with the oven. Combine all dry ingredients together in a bowl with a whisk.

    Whisk together the wet ingredients (except the water) then add them to the dry ingredients. Add in the water ¼ cup at a time. Mixing to incorporate until all the water is combined before adding the next ¼ cup.

    Shape the loaf into a round ball. Carefully remove the hot dutch oven, remove the lid, and spray the inside with nonstick cooking spray. Place rounded dough into the dutch oven. Cover with the lid and allow it to bake for 15 minutes. Remove the lid and turn the oven down to 300 F and allow to bake for an additional 2 hours until baked through completely. Allow to cool before slicing.

        Can this be done in a bread Dutch oven the same way? It’s built differently and would be baking with no sides once the cover is off

          This blew me out of the water - I wasn’t expecting it to be so good! Reminds me of a moist soda bread. Delicious slathered with butter and dunked into the Greek lemon chicken soup! 😃

              I use almond milk instead of coconut I have made it 3 times now and I love it. It is a decent round loa and not flat. Yummy straight out of the oven. I keep it in a paper bag and tost the slices. Found cooking time accurate.

                Excellent bread. Followed directions exactly, but didn’t need to use any water. Turned out moist, with a texture similar to rye bread. Next day, still moist. Used Le Cruset 29, which is a 5 qt Dutch oven.

                      Looks to me like it's 6 egg whites and 2 full eggs. I've just put my first batch in the oven with my fingers crossed. My dough is very wet even before adding the water in the final step. The pictures look more like a bisquick-type dough, but mine didn't turn out that way., so we'll see what happens.

                    The time is accurate. I’ve made this a couple of times. Since I already have all the ingredients on hand it seems to come together quick. I use the full fat coconut milk. Mine is dense and the loaf usually is flat.

                        Me too. I looked up subs and they include yogurt (that's what I used), hemp seeds, almond meal (not flour), tofu, wheat germ and chia seeds.

                        Ok so I made mine last night. 1. The coconut milk... is that the full fat kind and. Or the kind you drink from silk? I used full fat. 2. Mine was dense, a little gooey and there was a giant air bubble in the upper layer. How do I fix this?

                              I used almond milk, i think next time ii will use less liquid as i had to add extra coconut flour and husk as it was very wet, and i baked it for the time it stated and it was fine. Ive covered my slice in garlic butter and toasted it.
