Recipe Steps

  • Step 1

    To a large skillet over high heat, add the oil. Once the oil has heated, add the ground beef. Cook for 6-7 minutes until browned.

    Drop the heat to medium-low. Add the tomato paste, mustard, onion powder, garlic powder, smoked paprika, salt, and pepper. Pour the beef broth in and stir everything together.

    Bring the soup to a boil, then drop the heat to low and let it simmer for 10 minutes. Add the cream cheese and cheddar cheese and mix until melted. Turn off the heat and let the soup sit for 5 minutes.

    Divide the soup into 4 bowls. Sprinkle a little more cheddar cheese on top and garnish with sliced pickles and green onions. Serve immediately.

      Very good! Very meaty soup. I didn't add the extra cheese at the end and it was OK. Agree that the pickles are necessary to taste like a cheeseburger. Will make it again. Thanks for sharing.

          Husband and I throughly enjoyed—a few modifications though, i drained some of the oil off of the meat and I used sugar free ketchup in lieu of tomato paste. Dill pickles are essential, so don’t forget!

              This is amazing good! I’m not one who gets cheeseburger lust, but this is everything about a burger that I like with no stodgy bun to get in the way of the flavors. My only issue, if any is 1- it’s a bit salty. I would cut out the 1/2 tsp of salt in the recipe. And 2- the portion was a bit small. Also I had no tomato paste so I used sugar free keto ketchup instead. It adds a vinegar tang that balances the oil in the dish.

                I liked this soup! However, I'll probably either drain some of the fat from the beef or nix the oil when I make this again. It was a bit too greasy for me. (Guess it depends on whether I'm craving a greasy diner burger or a gourmet one!)

                      Pretty good! Easy to make. Definitely tastes like a cheeseburger in soup form. Next time I think I’ll about twice the tomato paste because the mustard taste was so strong and the tomato (ketchup) flavor was so greatly overpowered that I don’t think I even tasted it. I’d also like to figure out how to add some veggies. If anyone has any ideas, I’d love to hear them!

                        For more pro. Add a fried egg on top, you can add spinich for something green, and mushrooms would be a good addition as well.

                        The easiest way for more veg would be to add a side salad or lettuce as a garnish. If you want to add to the soup itself maybe add cabbage? It holds up well in soups and will stick to the burger theme by adding a leafy crunch.
