Low Carb Tabbouleh Salad with Feta Cheese

This low carb salad is a take on a traditional tabbouleh.

Using cauliflower rice in place of bulgar wheat, this recipe also uses rich and tangy sun-dried tomatoes in place of regular tomatoes for an added depth of flavor.

Topped with salty feta cheese and complemented with the crunch of sunflower seeds, this makes a great low carb vegetarian main for 2 or as a side dish to share.

  • Step 1

    Grate the cauliflower to form a ‘rice’ and add to a large saucepan with 1 tablespoon of water over a low/medium heat. Heat through until all the water has been absorbed.

    Transfer to a mixing bowl and leave to cool completely.

    While the cauliflower cools, finely dice the cucumber and slice the scallions.
  • Step 4

    Add the cucumber, scallions, coriander and lemon juice to the cauliflower. Season well and toss to combine.

    Finely chop the mint and parsley and add to the mixing bowl. Pour over the olive oil and toss to combine.

    Chop the tomatoes and add to the mixing bowl, stirring through.

    To serve, crumble the feta over the salad and sprinkle with sunflower seeds and extra mint.

        I threw in some hemp hearts instead of someof the cauli, they are very low in carbs and give it that grain-like, nutty flavour.

            I wanted to try this but when I look at the nutrition information I don’t consider 10 g for a salad to be low-carb. Especially when my daily allowance is only 19 carbs I don’t think I want to waste 10 and a salad. What makes this so high in carbs

              It has fiber and sugar, you'd subtract the fiber total from the carbs to give your net carbs

              the recipe is 2 portions. Even cutting in half for as single portion is very filling and only 5 carbs

            I loved this dish. It tasted much like traditional tabbouleh. I did not cook the cauliflower because of time and it was great.

              This is so delicious! I have made it twice in one week. Goes well with lamb and salmon. I omitted the sun dried tomatoes.

                Don't know why not, but the oil probably counted in the fat on this.

              I really thought this was good. How much is one serving? one cup?
