For a fresh, tropical meal that’s on the table quickly, make these coconut lime shrimp! They only take about 10 minutes from the time you make up the marinade to the time you take them out of the oven. Serve the shrimp with a zucchini or other low-carb side dish.

  • Coconut, Dried, Shredded Or Flaked, Unsweetened

    ¼ cup, shredded

  • Cilantro

    Cilantro

    ¼ cup, chopped

  • Salt

  • Step 1

    Rinse and devein shrimp.
    Step 1

    Grate the garlic and add it to a small bowl. Add the olive oil, lime juice, water, salt and shredded coconut.

    Add the cilantro and coconut mixture to a blender and blend well.

    Toss the shrimp in the coconut lime mixture. Lay the shrimp on a parchment-covered sheet pan in a single layer. Pour any remaining coconut lime mixture on top of the shrimp.

    Roast at 400 degrees for 3-5 minutes, depending on the size of the shrimp. Eat right away!

        Seemed salty to me. Will eliminate next time. I did not blend anything. Tossed all and added to pan. Air baked 400 for 9 minutes.

          I can't tolerate cilantro, has anyone made this without cilantro or substituted something else?

          So good! My family likes to try to make it better so when we make this again we will: use coconut oil instead of olive, use lime zest in the dish as well and just a touch of pepper like jalapeno.

            This was so tasty and satisfied my craving for Thai food. The lime juice and cilantro made it taste very fresh, not saucy and even better than standard restaurant fare. Added some coconut cauliflower rice and a half avocado sprinkled with Everything But Bagel seasoning. Will cook this again very soon!

                  The “batter” does not stick to the shrimp at all. Must be missing the step where you dip the shrimp in egg wash then put on batter.

                    I think cornstarch will throw you out of ketosis. Use Xanthum gum or guar gum

                  So tasty! Don't overcook your shrimp and serve over fresh spinach. I made a simple sauce from 1 Tbsp Thai sweet chili sauce (it has sugar so go lightly!) and 2 Tbsp. water to thin, and drizzled over all. Yum!

                  OMG! This was delicious! I stead of roasting I put in the air fryer at 400 for 11 minutes. Served with cauliflower rice!!! Wonderful!!!

                    Yum, yum and yum!!! I agree that I would skip “trying” to blend the mixture next time. The blender and even food processor didn’t really work due to low volume of mixture.

                      This was delicious! I minced the garlic instead of grating it. I did not blend the mixture, and I think it turned out nicely. The little pieces of coconut browned up beautifully. I roasted it for about 15 minutes then broiled it for another 5. Perfect. Served it with some fried cauliflower rice.

                        After reading all the different reviews, I’m going to try frying them in avocado oil. Bonefis* fries their coconut shrimp. Maybe it will work for crispy. I’ll let tou know.

                          Air fryer 11 minutes at 300 degrees.Would definitely do this again but used chives in place of cilantro. It is in my DNA to dislike the taste of cilantro, but I still wanted the pretty green.

                            No. Just use a little spray oil on the bottom before you put the shrimp in.

                          Made this tonight for dinner and everyone loved it! I can’t say the shrimp were crispy, but they were freakin delicious! Will definitely make this again!

                            This was delicious! 5 min under the broiler and they crisped right up. I served it over coconut lime cauliflower rice and everyone couldn’t stop raving about it. It took 20 min for the whole meal. Definitely a keeper!
