Ingredients

  • Almonds, Raw

  • 100% Pure Erythritol by Now

  • Baking Soda

  • Coconut Oil

    1 Zest of 1 small lime

  • Step 1

    Add the ground almonds, 1/2 a cup of the desiccated coconut, baking soda, lime zest, erythritol and salt to a food processor. Blend to combine.

    Add the lime juice, vanilla extract and coconut oil and blend again until well combined.

    Add the eggs and blend to form a slightly tacky cookie dough.

    Transfer the cookie dough to a bowl, cover and refrigerate for 30 minutes.
  • Step 5

    Preheat the oven to 350 degrees Fahrenheit and line a large shallow oven tray with baking paper.
  • Step 6

    Divide the dough into 15 even portions and press into cookie shapes across the lined oven tray, roughly 1/3 of an inch thick.

    Bake for 5 minutes, remove and sprinkle over the remaining desiccated coconut.

    Transfer back to the oven for a further 10 minutes or until firm and lightly golden on top and cooked through. Set aside to cool and firm further.

    You don’t need a food processor if you’re not going to be grinding whole almonds. You can mix with a spoon. I used a monk fruit/allulose sweetener. And I threw all the coconut in at once. Baked for 14 minutes straight. It was delicious! Also, the cookies are larger than I expected when you make 15 as the recipe describes.

            I’m in the process of making these and I followed the directions to the tee. The dough is really crumbly and look nothing like the picture above. What is everyone doing to get them to stick together?

                Tastes more like a biscuit than a cookie. Not that sweet. Maybe I made them too thin? Texture is dry

                      So good! I used almond flour instead of the ground almonds and swerve confectioners sugar and they cam out wonderful! Not too sweet and just a hint of tart lime.

                      Can I use Stevia?

                        If using Stevia, a liquid that is much sweeter, how much is equivalent to 1/2 cup Swerve (Erythritol) which is measured 1:1 to replace sugar in other recipes. Though I'm not sure that would effect the final outcome or texture of the cookies.
