  • Step 1

    Preheat an oven to 360 degrees. In a shallow pan, combine the ground beef with all seasonings. Cook on high heat until the beef is cooked through and slightly browned.

    Remove the pan from the heat. Stir in the chopped onion, lettuce, and cilantro.

    Prepare the bell peppers by removing the tops and hollowing the centers. Cut each pepper in half, and arrange the halves in an oven-safe baking dish.

    Spoon the taco filling into each pepper. Top the peppers off with the pepperjack cheese.

    Bake the taco boats, uncovered, on a middle rack of the oven for about 20 minutes - until the cheese is melted and browned.

    Made this I didn’t add the lettuce. Topped with chopped black olives and sour cream per another members suggestion. Very tasty. One half was very filling.

      Very good. I didn't have bell peppers so I used poblano peppers. Just about the same!

        Great idea but I had to make a few changes to suit the family’s taste. No lettuce in the peppers, used a simple pico to season and flavor the beef, topped the finished peppers with lettuce, sour cream, and another touch of shredded cheese. Very good

          An easy way to avoid parboiling the peppers is to prep them first and pop them in your oven while you are browning the meat. 15-20 minutes will be perfect for "Al dente" peppers!

            I don’t see where the recipe says to parboil the peppers🧐. Did you mistake the word “prepare” for “parboil”?

                    Make this on a regular basis. I do not add lettuce into meat and I dont parboil the peppers. Not necessary to mess up another pot!!! I add some marinara sauce and oregano or Italian seasoning to meat and omit cumin and cilantro for an Italian flair and freah salsa to the taco meat mixture just to add some moisture, doesn't take much to add extra flavor and yumminess. either way is yummy.

                      Great idea! I did make a few changes....I par boiled the peppers before stuffing. I then stuffed with the spiced meat, topped with pepper jack cheese and baked for 20 min. Once they cooled we topped with lettuce and homemade guacamole! Delicious! We did not miss the the shells!

                        I made a lot of changes to this recipe. I omitted the spices and used half a pkg of taco seasoning. I did not add the lettuce to the meat. After i cooked the boats, i topped them with lettuce, tomato, sliced black olives and sour cream. Absolutely delicious. I could eat this every day. Other than the bell pepper boat instead of the shell, its just like the tacos i used to eat. So glad i dont have to give tacos up.
