  • Baby Spinach

  • Step 1

    Add the pork to a mixing bowl along with the Italian seasoning, onion powder, Parmesan, egg, salt and pepper. Mince the garlic and add to the bowl. Use your hands to thoroughly combine.

    Press the pork mixture into a rectangle shape about 1/2 inch thick on a sheet of plastic wrap.

    Scatter the spinach across the pork. Dice the mushrooms and arrange across the spinach. Scatter over the grated mozzarella.

    Use the plastic wrap to roll the long edge of the pork over on itself to create a log. Pinch the edges closed to tightly seal the filling inside. Refrigerate for 20 minutes to firm up.

    Preheat the oven to 350 degrees Fahrenheit.

    Carefully turn the meatloaf out into a loaf tin and pour over the chopped tomatoes.

    Transfer to the oven to bake for 30 minutes. Increase the heat to 400 degrees Fahrenheit and bake for a further 15 minutes until cooked through and golden brown.

      Don’t need to use a plastic wrap or roll. My mother used to make this recipe by taking half the meat and pressing into the loaf pan. Make a slight well in the middle and add the stuffing. Cover with the remaining meat and pat down. Dont need to refrigerate

        Probable overstuffed. It was difficult to close. I also used an angus beef pork blend. Vague on tomatoes so I used crushed fire grilled tomatoes. Paired with Keto Hasselback Zucchini recipe. Delicious dinner. Will make it again.

              Take the plastic wrap OFF once you've created a roll. Put into bake pan and cover with tomato...

              You take the plastic wrap off before you cook it. It help to form the loaf.

                I added dried basil with the Italian seasoning, salt, pepper, etc. Then garnished with fresh basil after baking. I LOVE basil!

              This has become a family favorite. I sautéed the mushrooms first and covered each slice with a few extras. With a side of Keto friendly veggies and a simple salad, everyone is happy!

                    I have not found a print function on this app. So, what I do is copy the ingredients and then drop them into a Word document. Lite labor intensity but it works!

                    Delicious! I sautés the mushrooms first. Did not have Spinach so used kale. Then sprinkled Parmesan on top with the basil. Thank you for such a great recipe.

                          So good! Husband loved it too. Used half ground sirloin and half ground pork. Added red pepper flakes and pesto to the meat. This is a keeper!
