Recipe Steps

    Place a medium-sized saucepan over medium-high heat. Add the butter and let it melt. Roughly chop the onion and garlic, and add them to the pot.

    Sauté the onion and garlic for 2 minutes until fragrant. Roughly chop the tomatoes and add them to the saucepan. Cook for 3-4 minutes, or until the tomatoes are soft.

    Add the vegetable stock to the tomatoes and season with salt and pepper. Bring to a simmer, then drop the heat to low. Let the soup simmer for 10 minutes.

    Using an immersion blender, puree the tomatoes until smooth. Taste and adjust seasoning if needed. You can pass the soup through a fine sieve if you want a silky-smooth soup.

    Add the heavy cream and stir. Let the soup reduce and thicken for 20 minutes over the lowest heat. If it gets too thick, you can add a little more vegetable stock or water.

      As others have said this soup is absolutely delicious. However this shouldnt be labelled as keto. This receipe makes about 1.5- 2 cups of soup. I had to have 2 servings as 1 serving would have been about 3 mouthfulls.

        I used canned diced tomatoes and I forgot saute the onion first so I added. 2 tsp of minced, dried onion. I didn't have veggies stock on hand so II used homemade chicken bone broth. It was delicious 😋

          Excellent! I used fresh tomatoes that we roasted in cur wood burning pizza oven. I also added fresh basil from our garden. Wonderful flavor, rich and creamy.

            Used Roma tomatoes and sub chicken broth instead of vegetable. That decreased the net carb content to 3g per serving.

              Love it! I changed the vegetable stock to a garlic and thyme stock cube and it tastes more like a curry type soup. Served with Homemade Keto cloud bread- winner! Will be making again for sure!

                          So delicious! I used can of diced tomatoes instead of actual tomatoes. I blended it in the blender, then added the cream. My husband RAVED about it!

                          This was super easy to make and really delicious. I've only ever had canned tomato soup before, this was so much tastier by far. I recommend using a sieve, as the recipe suggests, to get a silky smooth texture. 10/10!
