  • Step 1

    Preheat your oven to 400 F/200 C. To a bowl, add the ground beef, ¼ cup parmesan, ¼ cup mozzarella, the egg, ½ tsp salt, and ½ tsp black pepper. Chop the parsley and add most of it in, reserving the rest as garnish.

    Combine the meatball ingredients until everything has come together. Divide into 20 portions and roll them into meatballs. Add the ghee to a skillet and place it over medium-high heat.

    Cook the meatballs in the skillet until browned on all sides. You may have to do this in 2 or 3 batches. Remove the meatballs from the skillet and transfer them to a casserole dish.

    Add the heavy cream to the skillet. Stir to remove the caramelized bits at the bottom of the pan. Season with the remaining salt and pepper and simmer for 5 minutes until it has thickened. Turn off the heat and stir in the remaining parmesan cheese.

    Pour the heavy cream mixture over the meatballs. Sprinkle 1 cup of mozzarella cheese on top. Transfer the casserole dish to the oven.

    Bake for 15-20 minutes until the meatballs are fully cooked and the cheese is golden. Let rest for 10 minutes then garnish with the remaining chopped parsley. Serve and enjoy!

      This was beautiful, I added garlic and spinach to the sauce and we ate it with cauliflower mash!

        Pretty good. One piece of advice: if your skillet is full of fat after browning the meatballs, it may be a good idea to remove some before you put the cream in. If there's too much grease it will just overwhelm the cream and it won't mix together nicely to make a sauce.

          These were so good. I had a salad with them to make a full meal. It would also be good with cauliflower mash or cauliflower rice. I think next time I will save myself some trouble and divide the meat mixture into 4 equal patties to fry. Then put the mozzarella on top to melt. Take out of the pan and make the sauce to pour over the patties and skip the oven.

                    The meatballs are really good but I had to use coconut milk instead of cream and that did not make for a creamy sauce. I will make it again.

                      If you can't use dairy cream, substitute coconut cream (unsweetened). It works better than the coconut "milk".

                      FYI: macros are off. Recipe says makes 5 servings of 5 meatballs. However instructions only have you make 20. So either adjust to “makes 4 servings” or change instructions to make 25 meatballs.
